Chicken Adobado And Frito La Criolla (Cuban Fried Chicken)

Ingredients & Directions

  • 1000 grams of chicken (semi-boned)
  • 180 grams of wheat flour
  • 116 grams of mojo to marinate
  • 116 grams of onion mojo
  • 4 grams of chopped parsley
  • 500 ml of oil for frying
  • White pepper to taste
  • Salt to taste

Cut the chicken by the loin in two halves, half-bone, season with salt and pepper, marinate, for 2 to 3 hours with mojo (Salt, Pepper, lemon and garlic). Drain and coat with wheat flour.

Fry with hot oil on both sides, (fry first with the part of the skin down and after turning brown).

Serve with onion mojo on top, sprinkled with chopped parsley.

Note: Mojo is any sauce that is made with garlic, olive oil or pork lard, and a citrus juice, traditionally bitter orange juice.
